40th Anniversary Mead Brew

Come Join Mead Master Bruce Brode and Grand Hydro Drew as they tackle making 25 gallons of various flavored meads for the club's 40th Anniversary! Sign up to let us know if you'll be joining us before the April Club Meeting and helping us out. We also have a need for a few additional 5 gallon carboys so if you can help us out. (Please note - unlike a shop brew carboy bearers will not take a portion of mead home for themselves. All mead is designated for the club. We will make it so that every carboy provider gets a little "thank you" for loaning us their vessels.)

Brewery Lab Demo

A friend of the owner of the Glendale Tap who works for the Eppendorf biotech company wants to plan a demo event at the GT to show off their equipment used to measure IBUs, ABV + SRM.  She isn't looking to make a sales pitch, she's been to the GT and talked with a few brewers and realized how much fun it would be with a bar full of them rather than dealing with techs only interested in DNA equipment !

Barrel Aged Barleywine project

For about 3 years or so, the Falcons have had a barrel aging project!    We have been removing and adding to our Heaven Hill Rye Whiskey barrel, the famous Falcons' barleywine.   It has not received much attention in the recent past, but that changed on Friday, Feb 21.

Tangerine Tupelo Melomel

Wanted to brew a semi-sweet mead, using Tupelo honey and tangerine juice. We have a mature tangerine tree in our back yard, and it is prolific. Last year we couldn't keep up with the fruit, so I juiced and froze a bunch: ten pounds of juice. It measured 17 brix on my refractometer. Finally got around to making the mead this month. It fermented almost 3 weeks in primary, at 65F, and is now ready to rack to secondary. I tasted it, and it tastes like high octane Tang! It is a cloudy, pale orange in color now, but should clear nicely after I ignore it for 6 months in secondary. There's both tangerine and honey aromatics a plenty right now.

Firestone Walker Anniversary Brew Event

For those of you that haven't heard, we have been invited to brew at Firestone Walker Brewery by their head brewer Matt Brynildson. We will be brewing 67 barrels of a very big beer that will be added to their anniversary blending beers for next years anniversary blend and for as many years as it lasts, as well as having some on tap at the Falcons 40th anniversary party. The Falcons Board decided to brew a high alcohol American Brown Ale that I dubbed a "Browneywine"

Smoked BBQ Chili Recipe

Here is my recipe that took first place at the Feb. Chili Cookoff.  It's fairly complicated and expensive so I only make it once or twice a year.  One batch has never been the same as I add things while cooking to taste.  It's easiest to add all ingredients to a crock pot and cook until desired texture.

Ingredients:

Black Bird

This is my Baltic Porter for the Maltose Falcons 40th Anniversary Party. Its a simplified version of my Bigger Baltic Porter recipe but keeping to the essences of the style. Gold Medal at 2014 Doug King Memorial Competition for Class 14 Northern European Strong Beers
