Coffee for Your Beer (or Soul)

What's the best way to get your coffee in your beer?

Most of the beer drinkers I know are coffee drinkers as well. Hell, most Americans crave that morning bump of caffeine. So it's natural that brewers attempt to combine the two fixes in one. So if you're wanting to add coffee to your next beer (say a nice roasty stout) - here's a few ways to do it:

Abita Brewing

I tried to post this a while back when I was in New Orleans...

Should you find yourself in New Orleans, try a few beers from Abita Brewing. They're a local brewery and they make some very good beers. Turbodog was my favorite, but the Amber and the Golden were good too.

King Leopold's Ghost

This is one of my favorite and personal recipe, I've brewed a version of this beer every year since 2006. This was the last beer I brewed for 2011 on 11-11-11 around 11pm. This version of my "Imperial Porter" was used "Beanie's Double Smoked Bourbon" custom malt.

Bus Trip to AHA Rally at Stone, Sat March 10, 2012

The Yeastside Brewers Club are putting together a bus trip to the Stone AHA Rally on Saturday March 10, 2012.  They have invited the Falcons to join the ride.  The cost is $25 RT, which is a good deal when you consider the price of gasoline.

March Shop Brew - The IPA's of March - First Day of Daylight Savings - DON'T show up at 9:00 am, your spot may be given away!

Our monthly Club Shop Brew is set for Sunday March 11th at 8:00 a.m. Our HMFIC Nancy Gold, also known as the President of the Maltose Falcons will be leading this crew with the brewing of her IPA’s of March a big India Pale Ale, . All Brew Crew members will be brewing on the Falcons 30 gallon all grain brew system located at the Home Beer Wine and Cheese Making Shop in Woodland Hills. Members will participate in all aspects of the brewing process from measuring and crushing the grain to clean up.

A new life for a dead freezer

My 14cu ft freezer died and I received a free 12cu ft freezer. Since my tap collar wouldn't fit the 12 I decided to try something completely different. My hops were taking up too much space in our house freezer and I needed more keg storage space so I combined the working freezer with the dead one and pumped cold air into it with a temperature controlled fan.

Gobble Em Up Chili

 This was my 3rd place chili. It's my standard "healthy" chili and truly just a damn awesome meal for a week! (Note.. it tastes even better over time). This version is not the hottest chili, focusing instead on building a world of flavor. Heat is always a bottle of hot sauce away!

 

Gobble Em Up Chili

For 6ish quarts of Chili:

6 slices of thick bacon, chopped

2.5 lbs Ground "Lean" Turkey (Not the extra lean)

1/3 c. Fresh ground chile powder (made out of dried chiles)

1/3 c. ground toasted coriander seed

2012 Mayfaire organized by the Maltose Falcons

Holy cow! 550 entries registered and a bunch of judges to run through them all. In the end, the judges at the Best of Show Panel commented on the stellar nature of the winners and just how tough the final judging was. In the end, the bird goes to a brewer known well to the Falcons, particularly for his Belgians. Congrats Mike!

Steve's Smokey Second Place Chili

So I had a lot of people ask me for the recipe I used for my chili, so here it is!  I kinda made it up as I went, so here's the recipe I as best as I could remember....

The Dry:

Kosher Salt

Smoked Sea Salt

1/2 Teaspoon Red Pepper Flakes

1 Teaspoon Oregano

1 Tablespoon Chili Powder

1 Tablespoons Smoked Paprika

2 Tablespoons Cumin

The Wet:

Vegetable Oil

1 Onion Diced

3 Cloves of Garlic, crushed

1/2 small can of Chipotle Sauce (about 3 oz)

1 Can tomato Paste

Drug Charge Means No Ale at Ale House

Apparently the fine folks at the Broadway Alehouse (nee The Fifth Amendment), need to take the advice of their name because the bar's been stripped of it's license by the ABC after an investigation found solidity to the rumors of drugs (marijuana and coke) being sold at the bar and a later sting where they sold a drink to an underage decoy.

Los Angeles Area Brewery Bus Tour 2012 - SOLD OUT

The Falcons are doing a bus tour of local breweries!  On Saturday 24 March the Falcons will visit some our fellow Falcon brewers who went pro at Enegren Brewing, Ladyface Ale House, Golden Road Brewing, LAB Brewing, and Eagle Rock Brewery.  Pick up and drop off locations will be Union Station and the HBWC shop in Woodland Hills.  We chose the breweries and schedule so that guests could take the train to meet the bus (draws on a larger audience and helps fill the bus).  $58 includes your bus ride, sandwich lunch, brewery tours and beer at all five breweries.

Wort Aeration Technique

Brewed a RyePA on Saturday, 1/28, and tried something new this time. A recent visit to Costco (AKA the 200 dollar store) turned up a gadget for wine geeks. It is called the Vinturi and is intended to aerate red wine as you pour it from the bottle into a decanter or even a glass. It uses the venturi effect to pull air through two small holes as the liquid passes down the main channel. I bought one (for about $20) with the idea that it might be useful in the brewery, as an alternative to canned oxygen and an air stone.

Our monthly Club Shop Brew is set for Sunday February 19th at 8:00 a.m. Our Club WebMeister and Grand Hydrometer, Drew Beechum, will be leading this crew with the brewing of an Oatmeal Raisin Brown Ale. All Brew Crew members will be brewing on the Falcons 30 gallon all grain brew system located at the Home Beer Wine and Cheese Making Shop in Woodland Hills. Each participant will then take home 5 gallons of wort to ferment at home at a really cheap price for their effort.

Doug King Comp A Rousing Success--Yet I Didn't Win!!! by the Alewench

We had a fine Doug King Competition yesterday. You shoulda been there if ya weren't!! Over 40 judges and many stewards (including my good friend Gina) converged on the Eagle Rock Brewery bright and early on the morning of the 21st. With over 100 entries to judge, we knew we were in for a long but very fulfilling and filling day! The day started off with some nice pumpkin bread baked by yours truly and a great burrito casserole, complete with salsa and guac, prepared by Rocky (the kegmaster and go-to guy for the day).
