help

hey fellas,

I'm a newbie to the club, brewing, etc.

so, my first time brewing and I have my brew in the secondary fermentor right now in preparation to bottle it in a few days. I chose to do a secondary fermentation to eliminate more sediment and just because i have been busy and needed to by more time before I bottle the brew.  I lost about a gallon of the wort, so it's a bit over 4 gallons or wort now. I am making the beach blonde ale and am wondering if i should put in all the priming sugar it calls for.  Also, do I mix/vigorously stir the priming mixture in and risk stirring up more sediment or do I just pour it into the glass carboy (secondary fermentor) without any stirring, then bottle from there?

Any thoughts welcome.  I don't want to mess it up.

thanks, Demetri

ps.  The monthly Falcons meeting last Sunday was totally AWESOME and I can't wait for the next one.  Thanks again for all those who brought....hopefully I can contribute this next time with some of this.

Demetri,

Welcome to the club!

If you're really down a full gallon, I would adjust your priming sugar down equally as well. The sugar is intended for a full 5 gallons, so your beers would be a little overly excited!

thanks fellas,

You hear so much, as an aspiring new beer brewer, that bottles will explode and blow up all over the place.  It's definitely a cause for concern, but I feel much more confident in taking these suggestions and getting it done.  I've actually been busy and want some time to do this process, but the real reason I most likely have stalled is because I don't want to ruin my precious 1st brew. haha.  So, I will use 4/5 of the priming sugar ingredients as I have 4 out of my original 5 gallons.

SO, I will put the already boiled and mixed priming sugar in at  room temperature in the bottom of the clean white plastic 7 gallon container.  Then put the wort from the secondary fermentor carboy into this new container containing the priming sugar and immediately bottle from this to the bottles.  ok...cool.

thanks again.  DT
