- "I am brewing a small blonde cream ale over Memorial weekend using the CA Lager yeast, and the beer will stay on the yeast until BWAF day. On brew day we will rack the beer into kegs, harvest and rinse the yeast, and finally re-pitch into the fresh wort that we have brewed, a recipe that I'm calling an Imperial Steam beer (aka a big California Common). Brewing higher gravity beers often calls for yeast cell counts that aren't easily attainable even when buying multiple packs and using starters. By brewing a lower gravity first and repitching the yeast, you can guarantee a sufficient number of yeast and a healthy fermentation. Of course we will throw something tasty on the grill as well to make sure everyone is well fed and sample beers from my keezer to stay hydrated.”
