This is my Chili that took 3rd place at the chili-cookoff on Sunday. I won't share the Bigfoot that I won, but I will share the recipe for the chili. Enjoy!
The Spices:
4 Big Pinches Kosher Salt
1/2 Teaspoon Red Pepper Flakes
1 Teaspoon Oregano
1/2 Tablespoon Chili Powder
2 Teaspoons Smoked Paprika
3 Tablespoons Cumin
The Rest:
1 Onion Diced Chopped
1/2 Green Pepper Chopped
3 Cloves of Garlic, crushed
2 Chipotle Peppers in adobo sauce seeded and chopped
1 Can tomato Paste
1 Can Diced Tomatoes (28 oz)
2 Beef Bullion Cubes
22 oz Bottle Arrogant Bastard
The Meat:
2 1/2 - 3 lbs of Beef Chuck cut into 1/4” - 1/2” cubes
Pour 8 oz of Arrogant Bastard into a glass. Drink this. Combine the remaining Arrogant Bastard and everything else in a slow cooker and cook on low for 6-8 hours.
If you don't have a slow cooker you could also use a dutch oven in your oven at 225F for the same amount of time.
