Szechuan Cherry Tonic

Another year, another LA Beer Week Festival and this time, we brought a "soda bar". Folks from Pacific Gravity and Strand Brewers joined us to pour a set of refreshers for the crowd.

Malt/Grain/Sugar/Extract: 

2 cups Turbinado Sugar

Extra Ingredients: 

2 TBSP Chinese Five Spice Powder

1 tsp Cinnamon

1 tsp Ginger, powdered

32 oz Trader Joe's 100% Tart Cherry Juice

Special Instructions / Notes: 

Combine sugar with 2 cups of filtered water. Bring to a boil for 10 minutes

Add the spices and whisk vigorously to incorporate - boil for another 10 minutes

Strain the syrup. It's best if you get a super fine mesh like a coffee filter. This will take a ton of time.

In a keg, add the cherry juice (careful of the sediment in the bottle), the filtered syrup and water. Shake to combine.

Chill overnight to near freezing. Hit with 30PSI and shake for 10 minutes.

Serve!
